I've used them before, along with a bunch of pork, for making salami.

Brasserie Savoy in San Francisco used to serve braised beef cheeks. Looked
to me like they were browned (perhaps dredged first...dunno) and then
braised in a sauce containing beef stock with red wine and herbs. They were
served simmering right out of the oven in a little le creuset. Soulful.

Ironic, now the site of the former Beef Cheex restaurant is delicious but
vegan.
