You do need to knead the dough like bread until the dough is elastic enough
to go through the pasta machine rollers without tearing.

Pasta dough is pretty stiff compared to bread dough, but it does need enough
liquid to be soft enough to be workable in the machine. Many people let the
kneaded dough rest, covered, for an hour before rolling - other say this
isn't necessary if you use a pasta machine (vs rolling it out by hand).

Kneading the dough will make it smoother and prepare it for rolling
with the machine. Putting the dough through the rollers itself is
a form of kneading. It develops the smoothness of the dough and
makes it more cohesive.

After initially mixing the dough let it rest 10 or 15 minutes,
then knead it again. This gives the starch in the flour time
to take up water and become more cohesive.

Start rolling the dough at the machine's thickest setting. After
the first run through the machine, fold it back over itself and
run it through again. Don't move to the a thinner setting until
you feel the dough smooth out and become more cohesive.

Thank you guys.... :-) website its lot of work.
The award will be an excuse to take a vacation to Barcelona, even if
February wouldn't be the month I would chose.

February is the month I have ALWAYS chosen to vacation in Barcelona: lodgings
cheap, tourists scarce, and you don't have to concern yourself about whether
the AC is installed or working.
