Default Eggplant

Well, our rhubarb might be dying off but we're having good luck with
eggplant, which we're growing for the first time.

I couldn't wait to try the first of the crop, so used a recipe which I've
used many times befo

Eggplant Parmigiana

olive oil
1 clove garlic -- minced
1 large onion -- chopped
2 14 oz. cans tomatoes
2 teaspoons sugar
1/2 teaspoon oregano leaves
1/2 teaspoon basil
1/2 teaspoon salt
1 cup dried breadcrumbs
2 eggs
2 tablespoons water
1 large eggplant -- 1/2" slices
1/2 cup Parmesan cheese -- grated
1 8-oz. package mozzarella cheese -- 1/4" slices

In 9" skillet over medium heat, heat 2 tablespoons oil and cook garlic and
onion until tender. Add next 5 ingredients. Reduce heat; cook, covered, 30
minutes.

On waxed paper, place breadcrumbs; in small dish beat eggs and water with
fork. Dip eggplant slices in egg mixture then in bread crumbs. Repeat to
coat slices twice.

Grease 13" x 9"" baking dish. In 12-inch skillet over medium heat, cook a
few eggplant slices at a time in hot oil until golden brown. Add more oil
as needed.

Preheat oven to 350ºF. Arrange half the eggplant slices in baking dish,
cover with half the tomato mixture, sprinkle with half the Parmesan, top
with half the mozzarella slices. Repeat.

Bake 25 minutes.

Glad you're having success with the eggplant crop. I re-discovered eggplant
about 15 years ago. It is very versatile vegetable. And eggplant tapenade or
caponata makes a great item for a summer picnic.

In case you can use some additional recipes, the following site has a
database containing 2655 eggplant recipes with more being continually added.

Thanks for all the info, Sam. That's a great site, isn't it - I've had it
on my list of favorites for several years, so can now get ready to try all
those 2655+ recipes!

Rhubarb can be grown indoors...Perhaps you are killing the plant with
kindness (too much sun/water)? Try indoors or in a very shady place.

Well, we're keeping it moist (as it's claimed it needs to be) and it's in
dappled shade for part of the day and full shade for the remainder.

How do I grow it indoors? In the garage? I'm puzzled since these plants
were quite big before they started to wilt.

Thanks for the rhubarb link - I still feel it's the hot dry summers, but we
grew it in full sun about 50 miles from here.

That's right, rhubarb does very pooly with hot and dry climes.

Rhubarb can be grown indoors...Perhaps you are killing the plant with
kindness (too much sun/water)? Try indoors or in a very shady place.

I doubt you can grow rhubarb indoors, not unless your abode consists of an
unheated trailer in the Adirondacks.
