And why they shouldn't do it. Fried food is full of fat,
cured meats generate carcinogens, cream is high in
saturated fat, and toasting bread generates carcinogenic
acrylamides. Bread itself has acrylamides, which form
when starch is exposed to high temperature, but toasting
makes it worse.

I made a turbot-broccoli-barley soup, with three Habaneros
that were removed before serving. I used the chicken broth
in a packet from Trader Joe's. The soup was fully cooked,
to neutralize an unknown anti-nutritional factor in broccoli
and kill any worms in the fish.
