Default Dinner last night Sat 10Oct09

Chicken thigh fillets, 3 that I cut out to even size all over and wrapped
up with spinach and rocket leaves and the leftover proscuitto, pinned with
toothpiks and rolled in a 'southern fried chicken' seasoning. Was thinking
of adding some haloumi cheese in the middle, but I think that would have
made it *too* salty, on top of the proscuitto. The other 3 thigh fillets I
left flat and just coated with the same seasoning and roasted them all in
the benchtop convection oven.

Sides were lightly steamed carrot fingers, a whole head of broccoli lightly
steamed, small red potatoes steamed, cut in half and drizzled with an
Aussie EVOO, a dab of butter, and sprinkled with fresh rosemary, mint,
parsley and a touch of garlic seasoning..... and some lightly sauteed
cabbage in butter and white pepper.


The chicken was tender as and tasty to boot, and the veges still had a lot
of crunch in them.

I got an 8.5/10......... only because she didn't really want to have any
cabbage!!
