Is now in the Krupps toaster oven cooking. and should be done in
about 10 minutes. i did not make corn bread. whole foods sells chunks of it in their bakery department, so i bought about the equivalent of 1 lb. i also used a medium salsa, not a mild & topped it with shredded mild cheddar. this is a test recipe. i'll give some to my neighbors across the road, & if they like it, then on saturday morning, i'll put it together for the pot luck lunch at the little synagogue i belong to, for rosh hashanah. harriet & critters in humid (fire dree) socal. |

I enjoyed it as a vegetarian casserole at the potluck but added beef and chipotle salsa when I made it for Clan Ranger. The locusts swarmed. <sigh> I'd made a huge casserole, doubling everything only to have no leftovers. I'll try it this coming weekend with shredded chicken or shredded pork and salsa verde to see if it's as popular. Even Spawn, who is almost allergic in her dislike of spiced foods, gobbled up her first helping. The Ranger |
