I'd then add some sliced (or chopped) onions and let them start to brown, add the mushrooms, a little stock, some sherry, and put the chicken back in the pan. Put the pan in a 350 or so oven until the chicken is done. If you want it richer, remove the chicken to a serving plate, put the pan back on the burner and stir in sour cream. Pour over the chicken and serve. You could probably add a little tomato or Dijon mustard, but don't overdo it. |
