Aloo Muttur (also spelt Mattar, Matar)
(Vegetarian Indian dish of ordinary potatoes and peas made into a tasty exotic treat) 5 Tablespoons cold-pressed oil 1 medium onion 1 Tablespoon ginger and garlic paste 3 cloves 1 cinnamon stick 2 bay leaves 1 tsp garam masala 1 tsp chili powder (more if you like it really hot!) 1/2 tsp turmeric powder 1/2 coriander powder 2 tomatoes quartered 2 diced potatoes (bite-sized) 1 cup peas 2 tsp sea salt 1 cup filtered water 1 cup fresh coriander leaves 1 Heat oil in pan, add onions, with garlic and ginger paste. Cook for 1 min. 2. Add garam masala, bay leaves, cloves, chili powder, turmeric powder, coriander powder, tomatoes and salt. 3. Add diced potatoes and peas. Mix and pour in 1 cup water. Boil and reduce heat. Cover and simmer 25 minutes. PLG |
