Default Recipe: Garlic Basil Sausge

Made this early this morning after prepping yesterday (cutting and
chilling the meat). I made 15 lbs. using sliced chuck and stuffing it
into pork casings:

Per 1 lb. of meat:

1/4 tsp. sea salt
1/4 tsp. white pepper
1/4 tsp. dried rubbed sage
1/4 tsp. powdered thyme
1/2 tsp. powdered celery seed
1/8 tsp. allspice
1/2 tsp. granulated garlic
1/4 tsp. paprika
2 tsp. dried basil leaf

It's quite tasty!

No. <g> Just stocking up for my low carb diet. :-)
The sausage came out a bit dry tho', really needed some pork fat, but
it's edible. I want to try smoking some of it. I suspect it'll be
better that way.

Stepped on the scale a bit ago, current record is #55 down.
I've got a jar of finished sunflower sprouts in the 'frige and another
jar of those and some red lentils started for my greens!

Great Job! You beat my record by 2 lb.

I'm heading in the other direction however. :-) Gained 5 lb. in the last few
weeks. Tonight's not going to help any as I'm meeting a friend at my
favorite brewery restaurant.

Thanks Jon.

#50 still to go, then I gotta make sure I can sustain a maintenance diet.
I think I have the lifestyle change down so am cautiously optimistic.

Only time will tell and I know as well as many others that it's more
easily said than done to change the habits of a lifetime. :-)

Right now, the price is too high to NOT get it right this time!

track!

congrats on the weight loss. It's a hard thing to do as once you reach a
certain age your body and those fat cells have made such good friends they
never want to say goodbye to one another. Keep up the good work and keep
the faith.

Thanks Ginny. It's taken me right around a year to get this far. I
don't plan to quit now. :-)

There is too much at stake...

I think I've finally managed to make the permanent lifestyle changes too
to keep it off.
