Default Smoker recipes???


Any good smoker recipes? A dear friend has bought himself a smoker and
asked if I'd check here for some recipes.. I gave him what I had
which was only three, hoping I could send him a few more.

Electric, Wood, Side firebox, Propane?

What?

here are the most common

Ribs
Boston Butt (pulled Pork)
Brisket (more Q than smoking)
Poultry ( I like turkey)
Fish

here are some steps:

1. Study different recipes for RUBS (determine how much HOT he likes)
2. Study the different sauce recipes and types.
3. Start reading here; http://www.eaglequest.com/~bbq/faq2/toc.html
It is the most comprehensive collection of data.

4. Start cooking then HANG ON he's in for the ride of his life.

PS St. Louis Cut Ribs IMHO are the best for smoking.

If it's a small electric smoker it's great place to start. He'll probably
need a rib rack that will hold the ribs vertically unless he's making just 1
rack.

It's were I and probably millions of others started. He'll have a lot of
fun. he can look up his smoker on the BBQ FAQ site (last post) Pulled pork
is a nice place to start BUT depending on the size it could take all day and
part of the night as well.

For the first few times just follow the instructions in the book - then
throw the book away .

Slow cooked, smoked meat of any kind is great. Once you get a taste
for it, every other method of cooking roasts and ribs is second best.
Also, if he decides to try a whole pork shoulder, aka. a "Picnic"
roast, which works really well on a smoker, take a small, sharp knife
and cut through the top side of the membrane that covers the bottom
and wraps around the bone on the small end. That stuff gets like
leather after a few hours (dogs tend to love it) and it'll be a lot
easier to remove if there's a slice through it when it gets put on.

I learned much of what we do from 2 places - Alt.food.barbecue - and
the food forum @ Kamado.com. They are the sellers of the smoker/grill
we have. The forums have extensive recipies for everything from pizza
on the smoker/grill to pulled pork and sooooo much more. Check it out.
Have friend google rubs and they'll get more ideas than they can ever
cook.
