Default Another (but totally different) Grilled Cheese query . . ..

We have pretty well beaten the which cheese/which bread question to
death. I've got a burning question . . . The Splendid Table e-
Newsletter has a neat recipe for grilled ham and cheese. LRK says to
melt butter in the pan and cook the sandwich in the butter. I have
ALWAYS buttered the bread first and then put the sandwich into the hot
pan. What do you do??? And if you put the butter in the pan first,
doesn't it make the sandwich just suck up too much butter>

Butter the bread. Otherwise, I feel like I'm wasting butter and also
uneven distribution maybe of the butter on the bread.

That said, lately I've been just layering bread, tomato and cheese
(and maybe a slice of ham) times two and using the top brown setting
on my toaster oven. No pan to clean, cuts fat and cals too. And very
fast.

Actually I have done this for years with regular grilled cheese. It
began when our butter was too cold to spread on the bread without
tearing. So I thought of melting the butter then adding the sandwich.

It's fabulous! Makes a nice crispy sandwich, not overly soaked in
butter.

Try it, I think you'll like it.

I have always promoted the melting of butter in the pan and then sloshing
the first piece of bread around in it. Then beuilding the sandwich int he
pan upon the sedon piece (which will absorb the rest of the butter int he
pan as you make it).

You use less butter and it gets more evenly distributed to the face of the
bread without tearing it up.

Yeah, but you really didn't invent it. My grandmother showed me this way,
when I was about 6 or 7. I have no idea how long she'd been doing it.

I always melt the butter in the pan. My butter is usually
unspreadable, or not easily spreadable. Even though I leave
it out most of the year it stays fairly firm. Only on the
hottest days of the year is it actually spreadable.

I don't think it really makes a difference. Also, I don't like
having to pick up a sandwich that is buttered on the outside to
put it in the pan.

My husband's family often made "open faced" grilled cheese sandwiches.
Lightly toast a slice of bread.

Top with cheese and your choice: tomato/ham/bacon/pineapple, etc. on
top, place on a baking pan and broil or top brown in an oven or toaster
oven until the cheese melts. Quite tasty even without butter or the top
slice of bread.

Reminds me of a Weight Watcher's "Reuben" sandwich from about 35 years
ago. Toasted bread, sliced chicken, drained kraut, cheese; broiled
until cheese melts. It was very good.

Understood, but it was actually pretty tasty and I imagine it would be
tasty if it were constructed like a "real" reuben, too. Rubenesque -

I sometimes do this, except I use the microwave to melt the cheese.
In fact, just this morning I toasted an "everything" bagel, put on
a slice of American cheese and 3 strips of cooked bacon and gave it
20 seconds in the micro, et voila' breakfast. This particular time
it was a "closed" sandwich, but I'll do open face with a single
slice of bread. I've found putting a paper towel under the bread
keeps it from getting soggy underneath.

Butter the bread first. I think you're right about soaking up a lot of
butter if you butter the pan instead of the bread. Maybe Lynne's got a
deal with Land O'Lakes. "-)

Because I live alone, I always keep half a stick of butter in a small
dish on the counter so I always have soft butter. In the rare case
that I don't have soft butter, I nuke some. Think I will try the
Butter-in-the-Pan Method next time!

I'm pretty non-butter oriented these days too. I have made grilled cheese
using olive oil and thought it was pretty good. You need to use a really
good olive oil, though. I was using some Spanish oil a friend brought back
from Segovia.

Southern Europe, and east Asia outside of Vietnam very seldom use
any butter in their cooking. So it's not such a small minority...

I prefer butter, but I'm trying to reduce saturated fat, so I sometimes
do olive oil. In fact, I *always* use olive oil, except that my wife
generally makes the grilled cheese, and she *always* uses butter.
Sunday she was at work, and had a business lunch (with our daughter?),
so I got four slices of bread, four slices of domestic swiss cheese,
about ten slices of salami, and some dijon mustard. I made up two
sandwiches, preheated a fry pan, put the two sandwiches in and then
dribbled a little olive oil in. I added a little more olive oil after I
flipped them. I've been using olive oil for this for several years, and
it's very good.

I use olive oil too only I shortcut and one-side toast the bread in the
toaster first then fill with cheese and cover the toasted outsides with a
little olive oil, flipping once for a minute or two until cheese melts. Slice
diagonally and enjoy!

Optionally, open after heating and insert avocado slices, mash back together
and enjoy!

Christy always buttered the sandwich first. I simply toss mine into a hot

Well, this works for me...

I toast the bread LIGHTLY first, butter it on the outside, put the
cheese in the sandwich then put it in a dry pan. Finishes toasting it
while the cheese melts well on the inside between the two pieces.

Yep, put it in the pan. You'll use less, and it will brown much better.

Why not just try it and see?

I toast and LIGHTLY butter both sides of the bread then put on the
cheddar cheese, mashed garlic & oregano and only then put in the pan to
heat through until the cheese gets melty.

Occasionally a few pieces of bacon are added.

And more often than not, i use the microwave with untoasted bread, mayo
& mustard, cheese & thin sliced meat, nuke till cheese is melty, its no
longer even a pseudo grilled cheese but its even better imo.

I prefer to butter the bread. That way, both sides get an appropriate
does of butter for grilling.

IMHO spreading the butter first on the pan lessens the amount of butter
required.

Just fold down the paper and rub the warm pan with the butter stick.

For most I start with the 2 pieces of bread open faced for a minute or so
then put the 2 pieces together.

Heat the pan, add the buttred bread, cheese, ham cheese. Brown it well on
one side, flip it, brown the other, You're doing it right

And then when you turn it over, you have to add more butter!

I always knew you were a woman after my own heart :-) I've used olive oil
too (no "ewwwwws" please) and it's very tasty. Think crusty bread dipped in
EVOO with cheese thrown in to greatly gild the gladiola, what's not to like?

I melt the butter in the pan and grill the sandwich in it.
