Depends on whether you put something else on top or not. I've seen chicken
pot pies with biscuits baked on the top instead of a top crust. It might
even be interesting to make a kind of savory streusel topping. But if it's
just a chicken stew staring out from a pie shell, then that does seem wrong
to me.

Another thing I'm considering ‹ since as far as I can tell, a pot pie
isn't anything other than creamed chicken with some wegetables in a
crust or two ‹ is to cut circles in the crust* and bake them flat, then
dump‹I mean spoon‹the "filling" on top of a crust disk and top it with
another one.

*OK, FINE! My crust is a Pillsbury All-Ready Crust that's been in the
fridge since Christmas and I wanna get it out of there.

Since practically all the chicken pot pies I have had have *only* a top
crust, without it you'd have chicken stew! Not that there much wrong
with stew!

And don't forget to brush the crust with an egg wash to make it look
marvelous as it bakes. Sprinkle it with a little sesame seeds might look
good too....

I'd just mix up some Bisquick and drop some dollops on top. Or use the
stuff in tubes.

I don't care for pot pies, I don't eat the soggy bottom crust and I'd only
nibble on the crispy parts of the top crust. I'd have my creamed schiken
over a heap of wide egg noodles.

Take scrap trimmings and cut them into little shamrocks just for the
heck of it. You will need the egg wash to make 'em stick to the top
pastry.

I've perfomed all sorts of criminal cookery in the urge to clean out
the freezer. If you skip the top crust, do top the filling with
something -- maybe mashed potatoes prettily striped with a fork and
merrily dusted with paprika before browning.

Not if you are making the Pennsylvania Dutch/Amish version, My sister
(used to live in Lancaster County) makes it. You start with a pot of
chicken soup/stew - not too thick!. Then she made a dough and rolled
it out like pie crust, let it dry a little and tore it into little
"rags" - like tagliatelle???
She dropped them by handfuls into the simmering stuff (never letting
it stop boiling) until they were tender. Served in shallow bowls. It
was pretty good but I still prefer two crust pot pies and my favorite
is turkey.

If you don't put a crust on it, isn't it creamed chicken
or even chicken-ala-king with vegetables?

I've always used James Beard's recipe for chicken pie which
begins with making his chicken fricassee. If I don't use a crust, I
often top it with baking powder biscuits.

It's YOUR kitchen and YOUR chicken, do whatever you please.

I appreciate the reply but that has all the potential (in my house) to
create leftovers. If I didn't want to get rid of this pie crust, I'd
be willing to consider the pot pie/creamed chicken and wegetables
mixture over mashed potatoes and I wouldn't bother with an oven.
