Default Friday Dinner (lent)

FWIW

For some of the population (mackerel snappers) Fridays during Lent is a
meatless choice, which is the reason one of the Soups D' jour on Fridays is
Clam Chowder.

There were several choices last evening from Tuna on toast (yes I still love
that stuff) or Pasta Marinara.

So here is what I did.

I baked about 10 to 12 of the smaller potatoes from a 10 Lb. bag.
caramelized several onions (sliced very thin)
removed the flowerets from several stalks of Broccoli.( later zapped crisp)
sliced the Broccoli stems into rounds ( later sautéed in butter with a
little soy as a side dish).
Made a cheddar/Roquefort sauce.

got out the marinated onions and cukes as a salad

Paper plates and a do it your self - baked potato - broccoli, caramelized
onion & cheese bar while catching up on the DVR recording


Yummy we all went back for seconds....
