Default Peanut Brittle Cookies

Peanut Brittle Cookies

1/2 cup packed dark brown sugar
1/2 cup butter, softened
1 egg, beaten and 1 tablespoon reserved
1 teaspoon pure vanilla extract
1 cup all-purpose flour
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 cup salted peanuts, finely chopped
1/2 cup salted peanuts

Preheat oven to 325F degrees. Grease large baking sheet with non-
stick spray. In large bowl, beat brown sugar and butter on medium
speed with mixer until well blended. Beat in 2 tablespoons beaten egg
and vanilla. On low speed, beat in flour, baking soda and cinnamon
until dough forms. Stir in 1/2 cup finely chopped peanuts.
Refrigerate dough for 30 minutes.

Crumble chilled dough onto cookie sheet. With floured hands, press
dough into 14x10 inch rectangle. Brush with reserved 1 tablespoon
beaten egg. Sprinkle with 1/2 cup salted peanuts and press into
dough.

Bake 20 to 25 minutes or until dark golden brown. Cool 5 minutes and
cut or break, while warm, into pieces.
