Default A busy cooking night

I bought five pounds of nice lean ground beef at BJs yesterday, so
tonight I processed it. I made some hamburgers for DH, a pot of
lasagna sauce with vegetables in it (I had to use up the leftover
veggies from the potluck lunch!), a tray of oven-baked meatballs, and
I froze the last couple of pounds for future use.

Then I decided that I really wanted to do some holiday baking, so I
made the pumpkin bread from Epicurious. It's a big batch and I made a
dozen muffins, two cute little mini-loaves, and a full-sized loaf.
Then the muffins and mini-loaves went into the freezer to eat later.
Mmmm that stuff is good!

My version has twice as much spice, a teaspoon of ginger, raisins and
craisins instead of nuts (we didn't have any) only two cups of sugar
instead of three (and it's plenty sweet!) and 1/2 cup applesauce to
cut down on the oil. So I've tweaked the recipe plenty, but DH said it
was very good.
