Cherry-Chocolate-Chip-Banana-Nut Bread

Recipe By amsel's Mom
Serving Size : 0 Preparation Time :0:00
Categories : Breads-Quick Family Recipes

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 cup shortening -- or butter
1 cup sugar
2 large eggs
3 large bananas -- mashed
2 cup flour
1 teaspoon baking soda
1/4 cup nuts -- chopped
1/4 cup maraschino cherries -- chopped
1/4 cup chocolate chips

1. Mix ingredients in order given.
2. Grease and flour 2 small loaf pans. Pour half of batter into each.
3. Bake at 350°F for 45 minutes.
4. Remove from pan and cool on rack.
5. Wrap in plastic wrap to store.

NOTES : The name of this recipe is said all as one word. It's a rule.

The recipe implies three medium bananas. For a moister, more dense and
flavorful bread, use three large or four medium bananas. And be sure
to always use fully ripe bananas. When they're still nice for eating,
they haven't developed the rich flavor you want in a bread.

Small would be the next size down from 9x5". Probably your 5x8
inchers. Sorry, I wish I had thought to document the particulars when
I still remembered them. I have Mom's recipes for pumpkin bread and
cranberry bread, too. No CLUE what size pans they go in, although I
think probably the larger ones. That's why I don't post them anymore.
I'll try making them sometime this winter and will post them if they
turn out okay.
