Default Rec: biscochitos (or bizcochitos) and Mexican chocolate


Traditional Mexican-style biscuit/cookies, made of course with lard.
There are recipes out there that use solid veg fat or even worse,
'butter-flavored' solid veg fat. They are anathema and should be
avoided. It's only once a year!

Biscochitos (from 'Historic Cookery'; this is an NM version,
paraphrased)

1 c sugar
2 c lard
1 tsp anise seed (crushed but not ground)
2 eggs, beaten
6 c plain/AP flour
3 tsp baking powder
1 tsp salt
1/4 c water (might not need all of it in a wetter climate)

1/2 c sugar plus 1 tsp ground cinnamon for topping

Cream lard and add sugar and anise seed. Add egs and beat well. Sift dry
ingredients together and add to the lard mixture, mix. Add water
gradually and knead until well mixed.

Roll out dough to 1/4--1/2 inch thickness. Cut as desired (circles and
diamonds are popular here). Dip top of each biscuit/cookie in
cinnamon/sugar mix and place on baking sheet.

Bake at 350 F for about 10 minutes until *lightly* browned. Cool on a
rack.

Tastes great with Mexican chocolate (from the same book):

1 qt milk
1 inch stick cinnamon
1/2 tsp ground nutmeg
3 tbs strong coffee (can leave it out and add more milk)
2 squares (2 oz) sweet chocolate
1/2 c boiling water
1 tbs ground almonds (optional, my addition)
1 tbs vanilla
1/8 tsp salt


Heat milk to boiling with cinnamon and coffee. Remove cinnamon, add
chocolate dissolved in boiling water and almonds, if used. Heat again to
boiling, remove from heat and add vanilla and salt. Beat until foamy
with a mixer or molinillo.

Or use the commercial sort: Abuelita and Ibarra are common brands.
Follow the instructions on the boxes.

YVW. If you don't see what you'd like just ask. Fortunately typing goes
quickly enough for me cos I don't need to look too often
