What to do with it.
I bought a fresh turkey breast this morning and stripped the meat from the bone. Did not try to get every last bit of meat off. Roasted the carcass, skin, onion, celery and carrot and the put them in a pot with water, salt and parsley. It looks and smells wonderful. It never did foam and it is very clear without me doing anything to it. Any suggestions about how to use it? BTW, I braised 1/2 of the meat and put the rest in the freezer. I am looking forward to some sandwiches with real turkey rather than getting deli stuff. -- Susan N.
