Default eggplant stuffing or dressing?

Someone on another group mentioned eggplant stuffing. For reasons
I won't go into, I don't want to ask her for the recipe. Does
someone here have such a recipe that they have tried and liked?
It sounds kind-of Cajun to me. Maybe I should look in my books
from and about that area, but I thought I'd ask here first.

The recipe I make, uses one large eggplant. The eggplant is peeled and
cubed, then soaked in salted water all day, or over night. Take the
eggplant out of the fridge, drain, and mix with your favorite stuffing.
At least half of the dish is eggplant, the rest is stuffing. Sprinkle
with cheese before you bake it. I would look for the recipe, but I have
pies in the oven. Sorry about that.

Actually, it turns out that stuffing is a misnomer. It is
dressing. I am kind-of intrigued. But if you hate eggplant...

Did you google for recipes? There are a few - scattered between the
stuffed eggplant recipes. I didn't google eggplant "dressing", but
eggplant isn't on my menu anyway.

I googled--and then I got smart and tried google groups, which
worked. Not what I was envisioning, and I like my fantasy version
better. I may just have to do some experiments.

The recipe I use is similar to this one. It tastes much better than it
sounds.
