The other day I had defrosted 2 nice bone in New York Steaks which I
intended to grill. Here comes the wind and rain off the ocean making it difficult if not impossible to grill. Hmmmm I boned the steaks and cut each into about 4 nice pieces. Heated a large cast iron pan - seasoned the steaks and preheated the pan added a little olive oil and then browned the steak pieces. When they were nicely browned I added a diced onion and a diced red bell pepper to soften. I looked around and had a lonely bottle of Guinness's, well in went the Guinness's, I also added a half teaspoon of beef stock paste covered and simmered. Just before serving I mixed 2 tablespoons of sour cream and about a teaspoon of corn starch and added it to the reduced liquid. I adjusted the salt & pepper although not too much was necessary. It turned out quite nice, tender and flavorful. Dimitri |
