Default Favorite pancake mix? Favorite pancake fruit addition?

What's your favorite pancake mix? I'm addicted to morning pancakes and have
been searching for the best pancake mix. I'm much too lazy to mix
ingredients. At the moment mine is Target's Buttermilk Pancake mix. It rises
more than most during cooking, giving it a delicate light texture, and it
tastes good. I've been adding thin slices of very ripe bananas. What's your
favorite fruit addition to pancakes?

I make up a big batch of the dry ingredients, store in a glass jar.
It saves time, money and you know what's in there. I just add an egg
and a cup of yogurt and the batter is ready to go. I do this too with
my muffin and biscuit mix. I also did it with a brownie mix, but
they became TOO easy to make, if you know what I mean - for anyone
watching calories.

I like strawberries (Particularly the little baby kind or wild ones) and
raspberries best.

If you don't like complication in the morning, You could measure the dry
ingredients the night before, and just add the eggs and milk and oil in
the morning. A little more work, but you had to get the cup measure
dirty anyhow

My mom used to do this when we went camping.

Never heard of waffles and peppermint chocolate chip ice cream and
chocolate syrup?

MAYBE had strawberries underneath. Done waffles a ton of ice cream ways!

You could also measur the milk, oil, and eggs in a cup the night before,
cover and store in the fridge.

For that matter, pancake and waffle batters hold up well in the fridge
overnight. You could make the whole thing the night before.

My mom always did that with her sourdough mix. Make it up the night
before...

When my children were little, I did the same. Do you remember the
Make-a-Mix Cookbook and the More Make-a-Mix? Those books were useful,
but you could do it with your own recipes.

This is a great idea! (I've been on a pancake kick lately, first one since I
was in college. I always make my own, if only because I usually eat them so
rarely I don't have any mix.) I like mine with butter and powdered sugar.

Aaah, another fan of sugar and lemon juice on pancakes! That's how my
mom served them and I never acquired a taste for syrup. It's a really
tasty combination on blueberry pancakes too!

No mix suggestion (we don't eat pancakes often enough to use up a box of
packaged mix before it stales, and prefer scratch), but blueberries,
especially fresh, are a really nice addition. Peaches, nectarines,
thinly-sliced apples or pears are really good, too.

Yum. :-) I've added bailey's to coffee and hot cocoa. Can't go wrong
with that stuff, but I generally tend to wax a bit cheaper and get
Carolyns.

Irish mist and heavy cream works too.

We tried Krusteaz but didn't like it as much as Aunt Jemima Original.

We always have some mix on hand, but I keep it in the freezer and it never
gets stale. We don't have them often either. I prefer some sort of berry in
the batter, with butter and syrup on top. I don't care for fruit toppings.

Keeping it in the freezer's a good idea; I do that with whole wheat
flour, but never thought of it for pancake mix (d'oh!) I mix the fruit
into the batter, so it's not really a topping as such; my husband likes
syrup, but I'm a sugar-and-lemon-juice gal myself.

The only flour/meal/grain/bisquit mix, etc., that I keep at room
temperature is all-purpose flour and white rice. Everything else is kept
in our upright freezer. All that stuff will keep for years that way.
Since there's just the two of us, it doesn't get used frequently or in
large quantities. When I make an oven pancake; e.g., Dutch Babies, I
always use lemon juice and powdered sugar on them. On regular pancakes or
griddlecakes I use butter and syrup. If I make cornmeal pancakes I often
put butter and molasses on them. Just the way I was brought up, I guess.

Cup or two of flour (alternate white or wholewheat) , an egg, some
baking powder, shot of oil and perhaps some sugar and raisins or
banana. It's faster and easier than trying to remember to buy pancake
mix and then finding the stuff in the cupboard.

Besides it tastes better than pancake mixes.

30 years ago I frequented a corner greek joint that had wonderful
pancakes. We got friendly with the owner and he shared his secret
recipe. A bag of mix. All it needed was water. To my surprise I
found the stuff at a "case lot" type store. Obviously this was long
before costco, sams and bj's. Being young and poor I used a lot of
the stuff as it was just a couple bucks for a big bag. The store
closed and I never saw the product after that. It looks like it's
still around but the packaging and branding is different. I don't buy
much food online but if I ate more pancakes I'd give this a try.

my father used to sometimes put kernel corn in his, but i couldn't get into
it.

Mom used to add cream corn to a waffle mix for those that wanted it, but
she added it right before cooking. Not to the batter.
