Goodie! Thanks for reporting! This is one simple recipe there is no
need to dress up :-)
So, what did you think of the consistency of the eggplant? I love
steaming them because they turn out so nice and moist :-).
Next experiment: Assemble, freeze, cook (mmmmmh, with or without prior
thawing...?).

That looks very nice. Steaming them is interesting. I'll try that.

That doesn't look like any eggplant parmigiana I've ever seen... it's
much too watery, looks more like eggplant parm soup... you forgot the
bread crumbs. It may taste okay but the texture is all wrong.

Yeah?? Hot dayam!! Thanks, Fleece! I wondered if it were too wet.
The only thing abut it is that I was getting a little gritty taste
sometimes. Can't figure out why * gotta be the seeds?

Oh, I loved the consistency of the cooked eggplant. Not sure yet if
I'll freeze some. Honest to Alex, I do not know what the point of all
that fol de rol in the CI recipe was about.

Maybe it's just me, but I wonder if sometimes CI inserts fol de rol where
none is needed.

So, it's a trick you can use every time you are going to grill or fry
eggplant. My favorite compliment from my children was the time we were
having very good grilled vegetables somewhere in a restaurant in Italy
and they said "But *your* grilled eggplant is better!". (Ny second
favorite compliment is when they saw all the hype about Sarah Palin
being sexy in the newspapers - yes, it appeared even here - and they
said "She's not sexy, and she looks old!". Isaid that she was 4 years
younger than I am, she's not old, and they replied "But she looks
*much* older than you" - now, that, coming from a teenager prone to
say "That necklace you're wearing is really ugly", is one hell of a
compliment!)
