Otherwise, don't let the door hit you on the way out. For Dinner: Baked Cod Filet: Rub cod filet all over with olive oil. In a shallow dish, mix Panko crumbs, about a T. of lemon zest, some parsley flakes, salt, pepper and garlic powder. Crush this coating into the filet, top and bottom. Place filet in a greased shallow oven-proof dish; bake at 375 deg. for about 20 minutes or until fish is done through and the crumbs are light brown. Serve with fresh lemon wedge. For sides, a colorful vegetable (green beans, broccoli, carrots or beets (yeah, Barb!) and a baked potato. Yum. N. |
