I made pot stickers to take to work for Chinese New Year. The filling
was made using a base mixture of spicy chicken sausage and chicken. I had a lot of the meat left over that I froze. I've posted this to the group before so I thought I'd spare you a re-run. Yesterday I took some of the meat base out of the freezer, defrosted it and added some spinach, mushroom flavored soy sauce and a few drops of sesame oil, green onion and the stems from the mushrooms that got stuffed with the filling. http://i31.tinypic.com/1ifz8y.jpg They were baked and served with some asparagus that was tossed with olive oil, fresh ground black pepper and salt then broiled. http://i26.tinypic.com/fxqjro.jpg Tonight I made fried ravioli with the meat base. I added some ricotta cheese and some fgbp and a little oregano, very little. http://i25.tinypic.com/34t1qir.jpg Put that on a won ton wrapper. I used that instead of making the dough from scratch, and added a leaf of parsley. http://i26.tinypic.com/3492oe9.jpg Folded into triangles. http://i30.tinypic.com/5bpf7b.jpg Cooked for a while in boiling water, drained and ready to fry. http://i32.tinypic.com/vfxkcy.jpg Melted about a half a stick of butter until it started browning. I then added a good drizzle of olive oil and when that heated up and started bubbling again I added the raviolis http://i30.tinypic.com/1o7oub.jpg Served with a grating of fresh parmesan cheese. http://i31.tinypic.com/2zxzbtk.jpg It was fun trying to get three different flavors from the basic meat mixture. koko --- http://www.kokoscorner.typepad.com updated 2/02 "There is no love more sincere than the love of food" George Bernard Shaw |
