Default Trans-Fat Substitute Even Worse Than Trans-Fats

Interesterified fats are even worse than the trans-fats
they were intended to replace. They raise bad cholesterol
even more and suppress insulin, creating an artificial
diabetes-like condition.

Note, however, that the study was paid for by the
palm oil industry. Palm oil is a natural oil high
in deadly saturated fats, which competes with both
trans-fats and interesterified fats for use as a
stable, high-temperature deep-frying oil.

If you want a "safe" deep-frying oil, you'll get it
about a month after you get your "safe" cigarettes.
