I have some leftover goat cheese that I purchased to use in a salad. Does
anyone have a pasta recipe that uses goat cheese? I've done a search, and everything I found is so complicated and uses ingredients I don't have. I'd like a simple pasta recipe I could make tonight. Diane M |

Another favorite goat cheese dinner, is baguette with goat cheese, sundried tomato, smoked salmon, and thin Bermuda red onion. Another is orzo, sundried tomato, parsley, and crumbled goat cheese. If it's crumbly, make a pomodoro sauce and sprinkle some big crumbles on it when you plate it. If it's squishy, you could use it to stuff canneloni, or in place of ricotta. --Blair |

Reserve 1/2 cup pasta water, drain the pasta well. In a deep sided pan (or a wok), toss the pasta with the goat cheese (if it's firm, crumble, and if it's soft, chunk it up into teaspoon sized pieces), sun dried tomatoes (the kind packed in oil, drained and chopped or sliced), fresh basil (chiffonade), the reserved pasta water and a bit of cream.
