Using up the leftover chicken
I had most of a chicken left over today, so here's what I did:
Breakfast: Egg foo yung with chicken, bean sprouts, sweet jalapeņos, onions, and sweet & sour sauce served over rice. Lunch: Waldorf salad (chopped apple, celery, mayo, and a bit of blue cheese) with chicken added, spooned into lettuce cups. Bob |
