Default Other uses for brandy butter?

Hi all,

I hope you all had a lovely holiday weekend.

I have a quandry. I made a double-batch of brandy butter to have with
our christmas pudding, since I've run low in the past. THIS year, it
was hardly touched! (Murphy's law, lol).

What else is it good on? I have some pumpkin bread in the freezer I
could spread it on, but I need some other ideas - I'd hate for it to go
to waste!

You could use it in baking. I think using it in pound cake would be good,
for instance.

Is "brandy butter" like hard sauce? Can you make up some apple brown
betty and serve it with that? Or what about using it in small amounts in
apple pies and the like?

Brandy butter

BBC Food
by Holly Jones

Serves 6

Preparation time less than 30 mins
no cooking required

Ingredients

125g/4oz unsalted butter, softened
125g/4oz icing sugar
2 tbsp boiling water
3 tbsp brandy

Method

1. Cream together the butter and the icing sugar.
2. Beat in the boiling water and brandy until smooth.
3. Chill until needed and serve with mince pies or Christmas pudding.


Sounds like something you could spread on American style biscuits.

Cream Biscuits

Recipe courtesy Paula Deen
2 cups self-rising flour, plus more for dusting
1 tablespoon sugar
1 1/2 cups heavy whipping cream

Preheat oven to 500 degrees F.

In a medium bowl, stir together the flour, sugar, and cream until the
dough forms a ball. Turn the dough out onto a surface dusted with
additional flour. Fold the dough in 1/2 and knead 5 to 7 times, adding
just enough flour to keep dough from sticking to your hands. Gently
roll out dough to 1/2-inch thickness. Using a 3-inch biscuit cutter
coated with flour, cut dough into biscuits. Place on baking sheet
coated with cooking spray, leaving at least 1-inch between each
biscuit. Bake for 10 minutes, or until golden brown.

Is brandy butter the same as hard sauce? We always used to keep it in
the fridge and dig it out with a teaspoon like a brandy fudge.

Otherwise it would be good with fruit mince or apple desserts...
