I want to do something where I shred the cranberiies, probably fresh
like an uncooked relish, but I don't want to end up too Thanksgiving-y. I'm largely looking for the red color for the table and a touch of fresh/sweet, so probably nothing Jello-based although I could be swayed with the right recipe. So far I'm thining cranberries, sugar, grand marnier, and orange peel in the food processor, then fresh mandarin sections stirred in. The rest of the menu is lobster tails, roasted caulifoiwer, whit rice/wild rice pilaf, artichoke casserole, creamed spinach, and rolls. So I need a touch of sweet and fresh (other than me, that is), dontcha think? |
