I'm doing an old Weight Watchers version of Country Captain. Serving it
with rice and a spinach salad.

Tomorrow night is Salisbury Steak.. and the kidlet has requested mac and
cheese. I have some fresh asparagus to use up also, as well as some
zucchini which I was thinking of cutting into matchsticks and doing up
with some carrot matchsticks.

I hear cooler weather is heading our way....but until then I'm still in
shorts and the windows open

Would you be able to post this sometime? Country Captain is one of my
all time favorite dishes. I have some recipes I use, but I doubt they
are Weight Watcher friendly. I use one by Edna Lewis, and the other
one is from a long time ago....

I use boneless, skinless breasts. Per the WW website recipe program it
is 6 points per serving. I always serve it with rice.

Country Captain

Recipe By :Weight Watchers, 1982
Serving Size : 2 Preparation Time :0:00
Categories : Poultry

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 1/2 pounds chicken parts
1/4 teaspoon salt
1/4 teaspoon pepper
2 teaspoons enchriched all purpose flour
2 teaspoons vegetable oil
1/2 cup diced onion
1/4 cup diced carrot
1/4 cup diced green bell pepper
1 clove garlic, minced
1 1/2 teaspoons curry powder
1 1/2 cups chopped, drained canned plum tomatoes
2 tablespoons raisins
1/4 cup chicken broth

Sprinkle chicken parts with salt and pepper, then flour. In a skillet
large enough to hold chicken in 1 layer, heat oil. Add chicken and
brown on all sides. Remove chicken to a plate.
In same skillet combine onion, carrot, green pepper and garlic and saute
until vegetables are tender but not browned. Add curry powder and stir
to combine. Stir in tomatoes and raisins and bring mixture to a boil.
Return chicken to skillet and pour over broth. Reduce heat and cover,
and simmer for 20 minutes. Remove cover and simmer until chicken is
tender, 5-10 minutes longer.

Heh! You'll get yours soon enough... That cold front is supposed to be
nation wide.

It was in the 70's here yesterday.

It will be below 30 tonight. The Border Collie is sleeping inside! I'm
just glad the rain dried up. I hate attempting to drive in ice
storms......

Especially in Texas.

Nobody here knows how to drive on ice! I spent some years up in the
mountains in California, and also up near Evergreen Colorado. I think I
still have those weed chains in my truck. ;-)
