Default Tonight's dinner

Costco changed their brand of single serve hummus. Not they carry Hannah
Hommus. That is the way they spell it. Anyway...

I am having that with some tomato wedges, flat bread and Kalamatta olives.
Yum!

Angela and husband had roast beef with rice fettuccine and a fruit salad.
No veggie. I know. Husband has been throwing his out so I figured... Why
bother? Angela is good to eat salad and raw veggies as snacks.

Having t bone steaks tonight, salad for me, home made chips and veggies
for the kids. Last night my son wanted sausages for the second night in
a row and I wanted stir-fry. I made sausage stir-fry I boiled the
sausages to cook them and get rid of excess fat. Cut them into bite
sized pieces and browned them with onion and garlic then added a pile of
cut up veggies. I had a jar of commercial satay sauce which I mixed with
a can of coconut cream and put that through veggie, meat mix and
simmered for a few minutes so veggies were done but crunchy. Took out my
share and added egg noodles to the rest.

Last night we had Boneless Skinless Chicken Breasts topped with Baby Swiss
slices and crispy bacon...I would have added caramelized onion but didn't
think about it until it was to late.Hubby ate his with BBQ sauce(he likes
BBQ sauce on chicken and pork.) I dipped mine in Low Carb Ranch Dressing. We
had a nice crispy salad with it. Hubby also had Potato wedges. Tonight
chicken again...freezer is getting low This time it will be chicken ,onion
and cheese fajitas. I will make some pinto beans as a side dish with bacon
and onion and garlic. We will have lettuce, tomato and sour cream for
toppings and a nice Salsa. My flour tortillas will be the low carb
ones...not Hubby's.
