Cantaloupe Salad with baby arugula
From Cuisine at home. This sounds simple and good to me. I like cantaloupe, it doesn't spike me, and soon it will be cheap here. Cantaloupe Salad with baby arugula: Use a melon baller to scoop the cantaloupe, or cube it. 4 servings For dressing: 1 tbsp white wine vinegar 2 tsps. snipped fresh chives. 1/2 tsp sugar (or sweetener of choice to equal) pinch of black pepper For Salad 2 cups cantaloupe pieces 1/2 cup baby arugula salt to taste. Whisk together vinegar, chives, sugar or sugar substitute, and pepper in a bowl. Toss cantaloupe with dressing. Add arugula, toss to combine and season salad with the salt. Per serving: 29 cal. 0g total fat and cholesterol, 13 mg sodium, 7g carb, 1g fiber, 1g protein. |

Cantaloupe Salad with baby arugula
About $5 here at the moment We went from having a glut of summer
fruits on the tables to apples and oranges almost overnight. There are still a few plums around and the highly priced cantaloupes (rockmelons) and some pale watermelon. Oh and green grapes are still ok. The bananas are still around $15 a kilo due to the floods and cyclone. I buy a few to help the farmers but not in the quantity I usually buy for the kids.
