Default Tonight's dinner

Okay so I messed up on two counts. First I didn't go to the grocery store
this week. I did buy a few things at Costco and some Queso dip at Target.
But no meat or fresh veggies other than the carrots I bought from Costco.
Angela is refusing to eat them. In fact she has flatly refused to eat any
and all vegetables ever again saying that they are disgusting. I find this
very hard to believe given that vegetables have always been my favorite
food. Oh yes there are some that I truly do not like in any way shape or
form. But I do like quite a few of them.

I gave her a choice of two meals tonight. Hormel Beef Au Jus with rice
noodles. This only because I need to use up the package and there is really
only enough for the two of us. Husband likes that meat so well I have to
cook another package just for him. Or... Pasta with red sauce. She chose
the red sauce. I figured this is a good thing since red sauce is a
vegetable. And when I make it I also add red peppers and chopped onions
from Just Tomatoes. They are freeze dried and she doesn't seem to notice
them in there. If I have mushrooms (which I do not) I might add those as
well. Or any other finely chopped veggies I have in the house. *snicker*
Grated carrots are good but I didn't have to time for that.

Now for the mistakes. I decided to add ground beef for protein since this
isn't a dairy day for us. Or wasn't... I found a single serve pack of
cooked ground beef in the freezer. I got that heating in the pan while I
looked for another single serve or hopefully two single serve packs. What I
found was enough for three of us. Oh snap! So I put that in, not having
time to search any further.

Then for the sauce. I bought a single jar at Target from the housewares
department. It is a line with Giada De Laurentis. Apparently I did not
notice when I bought it (or maybe I did and forgot) that the sauce has cream
in it. Oh snap again! The only other jars I have are from Costco and are
too large to fix just for two. I do have organic tomato sauce but we have
to leave for dance soon and feared I wouldn't have enough time to cook the
sauce through. So I guess we're having an extra dairy day this week. Or
two since I wound up with enough food for at least two meals. I had hoped
for an extra serving to send it in to dance with her later in the week.

I put in the sauce and it just wasn't enough given the amount of meat I had
in the skillet. So I added a can of tomato sauce and also some Italian
seasoning. The end result is very good.

I then cooked some rice spiral pasta and added it to the pan. I am having
mainly the meat and some sauce because for some odd reason my BG is too high
today. It was fine when I went to bed last night but has been high all day
today despite my eating a small breakfast and no lunch. Grrr...

And while in the freezer, I found some mystery meals. Some things sealed in
microwavable casseroles. I already know that Angela won't eat those and I
doubt I will either. Will try to defrost them when husband comes home and
leave them for him. *snicker*

I also found a huge bag of peppers and onions. I vaguely remember slicing
those for an enchilada casserole sometime this summer, I think. Angela
refuses to eat that now too. So I will use them to make a sort of Salisbury
Steak like I got at an odd American/Thai restaurant in CA. I know real
Salisbury steak has fillers in it. Theirs did not. It was just a large
hamburger patty served with sauteed peppers and onions and smothered in
gravy. Will make that after husband comes home because I just bought
another box of those Quik N' Eat cooked hamburger patties from Costco. Those
things are great! Not greasy at all. Very tender. And Angela can nuke one
for a snack if she is hungry.
