Drying Cranberries
Have any of you ever dried your own cranberries? I would like to do some
in the oven as my nice little drier is at my summer home(no room in the city kitchen). Any experiences would be helpful. Obviously, I can use sugar sweetened Craisins:-) Wendy |

I simply washed the berries and tossed them in the dehydrator to be done at a low temp. It took many days. The end result was light, crispy berries that seemed to be puffed full of air. Although I liked the end result, I learned that I should have cut the berries in half first or at least pierced them to allow them to dehydrate. I am assuming you are not following a raw diet, so you should blanch the berries first. This helps to break down the skin so that they dehydrate more quickly. When I made raisins, I did blanched them for about a minute. |

Thanks Julie, I have now found a recipe on a lowcarb site http://lowcarbdiets.about.com/od/snacks/r/driedcran.htm I will try this, probabby today, lightly cooking them first to break the skins. I will let you know how it all turns out. Wendy |
