FBG 110. Two hours later 96. You've heard of Tex-Mex. This was Thai-Mex.
Strips of chicken breast, marinated in ?, then simmered to perfection. One hour PP BG 109. -- Nick. Support severely wounded and disabled Veterans and their families! Stuffed with tuna, green onions, peas and rice cheese. Needed to use up the rice cheese before it went bad. Didn't put any sauce on it this time. Angela didn't like the sauce. BG was 312 after, but 311 before. What can I say? At least it didn't spike me. *sigh* |

I don't cook much, either! Here's mine: Low Carb Chile Verde Adjust the hot stuff as necessary. Include Serranos, Chipotles, Habaneros or the fires of your choice. The Anaheims aren’t hot (well, hardly). 1 lb. pork, cubed 4-5 tomatillos 4-5 Anaheim chilies 1-2 jalapeños or Serranos ½ yellow onion, minced 2 cloves garlic, minced 1/8 tsp cayenne pepper ¼-½ tsp cumin 1 tsp salt ¼ tsp black pepper Parboil tomatillos, Anaheims, and jalapenos until skin looks wrinkled and loose. Remove from water and put in freezer or ice water for a few minutes to cool. Save water from parboiling. Slice open jalapenos and Anaheims to remove seeds if you want to, then peel (you might wanna wear gloves). Peel tomatillos. Chop all three into small pieces. Heat deep skillet over medium high heat with 2-3 Tbs olive oil. Brown meat cubes and remove. Stir fry onion and garlic in the same pan. Add chiles, tomatillos, meat and spices and cover with water from parboiling. Simmer for 1-1/2 hours or until chiles fall apart. Add more water if necessary. Hey, It’s not brain surgery! But it’s goooooood! -- Nick. Support severely wounded and disabled Veterans and their families! I've known US vets who served as far back as the Spanish American War. They are all my heroes! Neanderthin adds fruits, but doesn't allow any type of processed foods whatsoever, no artificial sweeteners, no coffee, no dairy etc., which would be very hard for me to follow: I would have a hard time giving up coffee, and all dairy products as well. :-) The list of things you CAN'T have on the diet: Grains, corn, wheat, barley, rye, rice, oats, millet, and all products made from them. Beans, including all varieties of hard beans, lima beans, green beans, wax been, peas peanuts, chocolate, soy, fava beans and all products made from them. Potatoes, all varieties, yams, beets, taro cassava, turnips, and all products made from them. Dairy, milk, cheese, yougurt, whey, butter, and all products made from them, no matter what kind of animal milk was used to produce them. Coffee, not advised, even caffeine free. |

You may like this. In a small skillet I saute in EVOO some chopped ginger, onion and garlic, add some stir-fry mix http://loraldiabetes.blogspot.com/20...salad-mix.html and gently cook until soft. While that's happening I beat one egg (sometimes two) and add a pinch of turmeric, a grating of black pepper and a slosh of fish sauce to the egg mix. I drain and empty an 85gm can of tuna into the veges and heat through, then add the egg mix and lightly cover with grated cheese. It goes under the grill(broiler to you) until the cheese bubbles and browns. Usually the 1PP is much the same, or less, than fasting. Yup; dropping the carbs comes first. Then you can look at tweaking fat in your diet. What you absolutely should not do is go low fat, because that equates with either too few calories, or high carb.
