My Type 2 hubby doesn;t miss many things, like french fries, potatoes
etc. He does enjoy onion rings; in fact he asks me to order them , so that he can snitch JUST ONE...true! I made a batter tonight with 1/8 c flour; 3/8 c. carbquick... a little baking powder, and ice water. I would have used a smidge of LC beer instead of water., but I had finished it!! The beer that is). I cut the onion in largish slices (1/8-1/4 inch). Dunked them in the "stuff" and fried them in canola oil. I know there was fat, but the entree was garlic shrimp (virtually no carbs) and Coleslaw, also made virtually no-carb. Since it was a treat, and relatively good, I warmed a Low-carb Pita bread, so he could eat the "glop" Just an idea for a "feast" night~~ Gillian |
