Default fennel slaw

Here is a recipe I promised for some. I do believe that fennel has a
acceptable glycemic index.

I hope you enjoy it as much as my family does.

I use a vegan mayo at times for my vegan relatives. But otherwise I like
Hellman's brand the best.

Fennel Slaw

1 large fennel bulb trimmed and cleaned
salt, fresh grated black pepper
mayonnaise to bind
2 Tbs minced onion
1 small carrot finely shredded (optional )
and or some finely grated red cabbage ( optional ) which add some color

Fennel has a crisp fresh flavor, similar to anise
We like it raw in salad but it is wonderful oven roasted as a vegetable .
I roasted it for Thanksgiving with onions, garlic and herbs along with
sautéed mushrooms.

For salad mix all and chill well.
Use the fine green fern like leaves for garnish.
If you don't care for the mayo, a vinaigrette works well too.

Serves 4

it didn't. Just had a sweet taste.

Ah! I'll try that next time. I'm not overly fond of its liquorice
taste.
