Even diabetic kids are entitled to some silly fun. We older folks
might enjoy this one as well:

Pet Fish Dessert (Decoration)

This is a fun treat for kids. Simple to make and a real eye-catcher at
a party.

Recipe By: Pete & Peggy Romfh
Serving Size: 2
Cuisine: Garde-Manger
Main Ingredient: Gelatin
Categories: Low Sugar, Diabetic, Atkins-Friendly, Low Fat, Kid
Friendly, Simple - Easy, Snacks, Desserts

-= Ingredients =-
1/4 ounce unflavored gelatin ; - 1 envelope
12 ounces Diet Lemon-Lime soda ; - or non-diet if you wish
4 small gummi fish ; - or other gummi creatures
~~ -- Plastic sandwich bags -- ~~

-= Instructions =-
Pour about 2 ounces of cold soda in a bowl and stir in the gelatin.
Allow this to "bloom" for at least 5 minutes.

In the meantime heat the one cup of the soda to boiling. I do it in
the microwave. Pour the boiling soda into the soften gelatin and stir
until thoroughly mixed. Set it in the refrigerator to cool. Drink the
remaining swallow of soda if you wish.

Place each sandwich bag in a cup with the top open.

When the gelatin is partly set pour some into each bag then slide a
couple of fish down the side so they stay upright.
Place the cups in the refrigerator until the gelatin is fully set (at
least 1 hour).

Tie the tops of the bag closed with ribbon or yarn. Serve with small
plastic spoons and grab your camera.

Each (app 3/4 cup ) serving contains an estimated:
Cals: 47, FatCals: 0, TotFat: 0g
SatFat: 0g, PolyFat: 0g, MonoFat: 0g
Chol: 0mg, Na: 41mg, K: 16mg
TotCarbs: 6g, Fiber: 0g, Sugars: 5g
NetCarbs: 6g, Protein: 4g

NOTES:
This recipe scales up nicely if you're doing a party.

Sounds like a homemade version of lemon-lime JelloŽ to me and most
kids I know love JelloŽ.

If the kids are the right age, they might prefer the gummiworms:-)

If it is gelatine, how could it srvive in a lunchbox without dissolving
back into a liquid?

If you increased the amount of gelatin a bit it would probably survive
OK. Think of "Knox Blox" or something similar.
Or put something frozen in the lunch to keep things cool. It just
needs to be something than can be eaten when it's thawed out.

Gummi (fish, worms, etc.) are mostly gelatin anyway.

Exactly. I just used diet lemon-lime soda because I didn't want any
coloring and diet kept the carbs down.

Someone at my office suggested an "Adult" version of this with Tequila
and a gummi worm. Think of "Jello Shots".

I don't know of any who do. My daughter often asks for it when we see it
made up at the store because she thinks it's pretty. But then she spits it
out once she gets it in her mouth. None of her friends like it either.

I wouldn't eat it as a kid because I regarded it as "sick" food. Pretty
much the only time we got it at home was when we were sick.

That's one thing I've never had. I know people who make the stuff but I
can't stand Jell-O so it those never looked appealing.

You'd have to put it in an insulated container. Angela has some that I send
in her lunch. Some are safe for hot or cold foods. One is for cold food
only. She used to have some large ones, shaped like bowls with lids, but I
wound up throwing them out.

I bought them because they said you could put them in the microwave. But I
found that when I did that and then put the lid on, it formed a seal that
was next to impossible to break. The third time she came home after having
no lunch, I threw them away. That time, nobody could get the lid off using
any means. Threw it out with the food still in it.

I don't like jello either, but find that adding booze to it improves it
immensely.

After a few shots, I cease caring if it's jello or not!

That's one thing I could never bring myself to try. But then, I don't like
alcohol either.
