Rice is really high in carbs itself. Hardly the thing a diabetic should be
eating. But if you want to try it, any old recipe will do. Just be sure to
count the carbs.

I have plenty f rice pudding recipes, but none that I would recomend for a
diabetic. the rice, itself, is a fast acting carb, so changing the
sweetener would not makeenugh difference.

You can make other custard desserts using the artificial sweetener of your
choice. just follow the regular recipe and change the sweetener. I make
pumpkin custard by following the recipe on the can of pumpkin (not pum[kin
pie filling) and using the artificial sweetener. I generally don't even
use evaporated milk, which, although not sweetened like condensed milk,
has a double dose of the regular milk carbs. I use extra spiceing to perk
it up as it is a bit less rich than the regular recipe using the
evaporated milk.

Plaiin cup custard is also fine with the sweetener substitution.

Use your own recipe, just replace the rice with 1/3 less brown rice and
sweeten with Splenda. Make sure that you measure your portion before
eating

ADA website has one from their cookbook. I tried to make it- i goofed
on it.
