I don't know, but I have a vague recollection of reading somewhere that
the sourdough has a similar effect to putting vinegar in food. It may,
for some people, reduce the spike effect. Only your meter knows for
sure, though.

Baguette, white, plain (France) 95±15

Wholemeal barley flour bread 70

Wholemeal barley flour bread with sourdough (lactic acid) 53

really found useful was the one I personally developed using
