Default Ozoni New Year soup

Moms recipe
makes 4 bowls of Ozoni

6 cups chicken broth or dashi
1/2 pound chicken breast, cut in 3/4 inch cubes
1/2 small Napa cabbage, slices in 3 inch pieces
1 Kamaboko fish cake, sliced
8 dried shitake mushrooms, soaked and sliced
1 carrot, julienned
8 slices daikon, 1/8 inch thick
8 stalks fresh spinach, chopped stalk removed
1 tsp shoyu
2 tbs sake
salt to taste
8 pieces mochi
1 green onion, chopped

Heat broth to boiling. Add shoyu, sake and salt to taste. Add chicken,
nappa, Kamaboko, carrot, daikon, spinach and mushrooms. Simmer for 15
minutes.

Put 2 pieces of mochi in each soup bowl. Ladle in hot soup mixture.
Garnish with green onion.

Year’s Day to give one strength and assure prosperity for the new
year."

You can make the Ozoni better (more authentic) by using Mizoni instead
of Napa. Since Mizoni was almost impossible to find when Mom wrote the
recipe, she used Napa. I do see Mizoni in Asian food markets
sometimes.

When your daughter-in-law comes to the US, the thing she will miss
most is Japanese rice. There is no rice available in the US that is
near as good as Japanese rice. Mom's relatives in Japan would send her
bags of rice several times a year. There are some better brands of US
rice that are good, I usually buy Nishiki.

Mochi is another of my favorites. The ice cream is great too.
We made a Buddha's Feast that was so very good. Supposed to be without
meats but we added large prawns (not pond raised) and scallops. Great.
I found some great Soba noodles and will having that tomorrow with
shredded Daikon and tofu plus the dipping sauce.

I like cold soba with thread thin shredded daikon and cold tofu. I
like the tofu cubed with Bonito Flakes, chopped green onion and a
grated ginger/shoyu sauce. That takes me back to the years I lived
alone, I had tofu almost every day. Now I have American food most of
the time.
