Well Boron, UB is over and I have started my little experiment with the Sourdough Jack's. Group One: 3/4 cup by volume All-purpose flour, 1/2 cup by volume distilled water, One packet of Sourdough Jack's Sourdough starter. Group Two: 3/4 cup by volume All-purpose flour, 1/2 cup by volume distilled water. Used seperate plastic spoons to stir and mix. Used clean, not sterilized quart mason jars. Placed each jar in a cold oven with the oven light on at about 10:30 this AM. (04/20/06). Will make notes and keep the group posted for those interested. <End of SNIP> I checked the jars when I got home last evening around 9 o'clock. The Sourdough Jack's had some significant bubbling going on. But I had bubbles in the straight flour and water method also. HMMMMM. There is a distinct difference in the aromas of each jar. took them out of the oven and placed them on the counter. Checked the jars again this morning around 9 o'clock. The jar with the Sourdough Jack's is higher up in the jar than the flour/water mixture is in it's jar. Could this be simply because of the difference of the added starter packet. The sourdough packet added 1/2 ounce to the mixture. I am going to take equal amounts of the Sourdough Jack's starter and the flour/water starter. I will refresh them and see if the results are any different. If there is no difference in the rising ratio, my little experiment is inconclusive. Maybe I can find another Sourdough Jack's book on the 'net and try again. Then again, if the taste is good and the results from baking are good, do I want to try again? HMMMMMMM. I thought about borrowing my daughter's digital camera and taking pictures. After all, a picture is worth a thousand words. I could post them on my bread blog at http://www.thefreshloaf.com .
