Barbecue (alt.food.barbecue) Discuss barbecue and grilling--southern style "low and slow" smoking of ribs, shoulders and briskets, as well as direct heat grilling of everything from burgers to salmon to vegetables.

Default Dinosaur BBQ

Anyone checked out the new Dinosaur BBQ restaurant in NYC yet? I'll be doing so sometime in Feb, so if no one's been there yet, I'll let everyone know if it's worth the trip up to a not so great neighborhood.

Haven't been to that one yet but I've been to the Original in Syracuse,
NY--in fact, I was there yesterday during my lunch break.
Great food. Unfortunately I hear some people didn't like the place in NYC.

Just bought a brisket flat at BJ's this morning. Any suggestions on
smoking it? I was thinking of doing the same way I did the pork butt on the
grill. Any gotchas? (yeah yeah I know, I gotta re-read the faq....)

I like a mustard slather on mine and then the rub. If you got a trimmed
flat, you mind need to take it off the heat a bit early to keep it from
drying out.

Don't forget to slice across teh grain. You may want to trim a small
corner off before slather/rub co that you'll know which way to slice
when it's done.

My wife and I ate at the ones in Syracuse and Rochester. Good stuff.
We try BBQ all over the country and live in Houston. Best I've found up
north and comparable to better places down south.

Like some others here, the owners spent a few years on the road, cooking
and learning, before they opened up the Syracuse store in early 80s.

Got all the regulars and they use the right language. Their barbecue is
slow pit smoked - ready when it is ready, steaks and the like are
grilled... They even have a slow smoked Prime Rib.

Only things missing were corn bread and Texas sausage.

I see that on their website, they have an ad for a book:

Dinosaur Bar-B-Que, An American Roadhouse

"This first ever barbecue restaurant cookbook
takes you on an adventurous journey
into the world of low & slow barbecue
and fast & furious grillin'!

With over 100 attitude-packed recipes
John Stage reveals many of his secret recipes
that have made "The Dinosaur" a favorite with
Barbecue aficianados everywhere!

Colorful Photography teases the tastebuds and
captures the lively characters and energetic vibe
of this Genuine Honky-Tonk Rib Joint!"

The first sentence says it all....

Depends. I've never gone during the evening hours (or maybe I did once a
long time ago). But during lunch, it's not too bad.

When I went on Friday, I got there just around 11:30am and didn't have to
wait. Other times, it was usually less than 30 minute wait.

It's a good book. The recipes are good and the book looks great on my
coffee table.

Wish we had a Dinosaur Q here in Pittsburgh. The nearest decent Q is
farther than I care to drive, and I don't mind driving!

Has anybody been to the NYC joint yet? How bad are the reviews?? Couple
weeks ago, I was in the Syracuse Dinosaur and happened to see John Stage
(the guy who founded the place) and asked him about the reviews--he said
basically, they didn't know what they're talking about!
