Barbecue (alt.food.barbecue) Discuss barbecue and grilling--southern style "low and slow" smoking of ribs, shoulders and briskets, as well as direct heat grilling of everything from burgers to salmon to vegetables.

Default Simple BBQ sauce

Have any tried this? This is from "Awesome BBQ Sauce" from allrecipes.com.
Obviously it's very simple. It gets very positive reviews.

I'd probably use powdered garlic.

1 cup brown sugar
1/2 cup chile sauce
1/2 cup rum
1/4 cup soy sauce
1/4 cup ketchup
1/4 cup Worcestershire sauce
2 cloves garlic, crushed
1 teaspoon ground dry mustard
ground black pepper to taste

Directions
1.In a saucepan over low heat, mix the brown sugar, chile sauce, rum, soy
sauce, ketchup, Worcestershire sauce, garlic, dry mustard, and pepper.
Simmer 30 minutes, stirring occasionally. Cool, and refrigerate until ready
to use.

You might consider upping the rum to 2-3 cups. Then when you tell your
guests "How to Brine a Turkey", they will forget...

Sweet baby rays gets good reviews. I think it sucks.

And it's really simple when don't measure. If you start drinking the rum,
you might change the mixture.

I never tried Heinz chili sauce. I'll buy some next trip.

Maybe I'm being finicky but this just doesn't sound good to me.

Two comments.

#1 - when using spirits in sauces, I strongly suggest reducing the spirits
before mixing it into the sauce, and I suggest reducing spirits in a microwave
oven. This basically uses heat from the water in the spirit to drive off the
alcohol, but avoids the risk of burning the flavors remaining. Be careful
since doing this basically means you're creating a potential alcohol
explosion in your microwave.

#2 - I'm sure that many would like this sauce, but really, why go to the
trouble to mix up a pretty ordinary sauce like this when you can just start
with a bottled sauce from the supermarket and customize it a little? It's
probably cheaper, anyway.

It actually sounds pretty ordinary to me, too.

If the term "generic" ever applied, I think this would be the case. Nothing
different. Nothing extraordinary. (HEINZ!!!) CHILI SAUCE. (?) Not even
just a list of four to eight spices and ingredients to make any sort of a
"special" rub/sauce?

Did it taste good? Or not? Might have.

It sucks unless HFCS is your idea of BBQ sauce.
