discussion in a thread about the La Caja China Roaster led me to dig this

Hi Dave, thanks for sharing that website, it was fascinating. The only
thing I didn't see, and don't really need to know, was what they
marinated it in. It was just curiosity on my part, esp as it looked
kind of green.

I don't know what they do for the marinade, Nan. I'm not into marinading
whole or half pigs, so I didn't pay close attention to that part. This was a
short video describing what they do. It is just described as mojo.

I *was* going to get a caja china, now I just may go out and buy myself a
bunch of cinderblocks!
