Any reason I shouldn't use honey instead of brown sugar?
Can I substitue equal volumes?

I happen to have a lot of honey right now so am looking for ways to use
it.
Other suggestions welcome.

I think I heard that honey is twice as sweet as sugar, so perhaps
equal quantities are not right. But hey, I like sweet, so why not try
it anyway.

White sugar should be 100% sugar. Brown sugar still has some molasses,
but is close to 100%. Honey and Syrup, on the other hand also have
water and a few other solids thrown in, like pollen and wax, so they
are less than 100% sugar. Pure maple syrup is 67% sugar. The
concentration in honey will vary based on the weather before harvest
and other variables.

But what fun would there be if you couldn't experiment to come up with
a recipe that you like? At least it gives you an excuse to fire up
more often.
