Default whats it like to smoke?

I have been reading alot about bbq and grilling the last couple of day.
and only found 1 site that talked about how often to add wood chips.

things I would like to smoke.
ribs
chicken,
ribs
duck,
ribs,
sausage
ribs
well il smoke just about anything .

but how many hours does it take to cook different foods
and how often will have I have to ad more wood?

ps incase it matters I will be using an electric smoker.
