Default Almond paste

BHi,
Could anyone give me the method of making almond paste for filling
almond cakes/cookies?.

I know that the ingredients are ground almonds, liquid glucose and
castor sugar but I don't know the proportions or method.

Also, is it necessary to refridgerate it. I live on a yacht with
minimal refrigeration.

Why not just buy marzipan? Same thing and ready made if purchased as
the plain stuff, not chocolate coated.

If you want to make your own, here are two versions...

Marzipan uncooked
1/4 pound ground blanched almonds
1/4 pound powdered sugar
1 egg white
1/4 tsp. salt

Marzipan cooked
3 cups sugar
1 cup water
4 cups ground blanched almonds

Actually, you can buy almond paste. There is a difference, I believe in the
amount of sugar, between almond paste and marzipan. I'm sure someone will
know. Sokol foods makes almond paste. If it isn't available locally, they
will ship.

"Almond Paste, NOT THE SAME AS MARZIPAN, is a paste of almonds and sugar.
Look for one with less than 25% sugar for a good almond flavor. It can be
found in tubes and cans in the baking section of the supermarket. Once
opened, wrap the remaining portion well in foil and store in the
refrigerator for as long as two months."
