Default baking chocolate with no milk products

The reason I was going to Baker's is that Ghiradelli, Nestle Premium,
Hershey Premium and several other brands not familiar to me had either
butter or milk products in them or "possibly" in them whatever that
may mean. I didn't see Scharffenbergers in the three stores I went to,
so I don't know about them.
