I don't know where you are physically but if anywhere in the North East
US I'd recommend checking out a "boot camp" class at the Culinary
Institute of America. It's located in Hyde Park, New York. The class is
a week long I believe.
I haven't taken it. *Yet* And I believe that it's rather expensive but
it's also one of the top culinary schools.
